The cooking is led by Chef Alexis Hernández Maldonado, who hails from Mexico and blends pre-Hispanic traditions with modern culinary art — think handmade corn tortillas and tostadas prepared using ancient methods, Oaxacan-style mole variations and Caribbean-style ceviche, all built on fresh, made-in-house salsas.
